With a professional career spanning Switzerland and Portugal, the chef from Trás-os-Montes runs four restaurants awarded five MICHELIN stars, making him the most awarded chef by the MICHELIN Guide in Portugal (2 MICHELIN stars at the Antiqvvm, 1 star at Schistó, 1 star at 2Monkeys, 1 star in the Blind and 1 star in Oculto). He has also been awarded prestigious titles such as Chef of the Year 2003 (Edições do Gosto), Chef of the Year 2013 (Revista de Vinhos Awards), Best Chef in Portugal 2014 (Arco Atlântico Gastro Awards) and the “Chefs de l’Avenir” award in 2011 by the International Academy of Gastronomy in Paris.
From Ferreira de Aves, the resident chef brings with him a passion for cooking, shaped from an early age by a strong connection to the countryside and to local produce. After graduating from the Seia School of Hospitality and Tourism, his journey includes experience in Portugal and abroad, including time in Michelin-starred restaurants. Organisation, method, attention to detail and a tireless pursuit of excellence are essential to his work, but it is in his family that he finds his foundation and the inspiration to lead teams.
