Schistó was born out of a desire to reimagine Douro cuisine with boldness, art and respect for its origins. The connection to the land runs deep: vegetables, fruit and herbs come directly from the organic garden at Quinta da Vacaria, where everything grows in tune with the cycles of nature.
At Schistó, every gastronomic experience is a sensory journey through the Douro, based on local products—many of them from our own Estate—and transformed into MICHELIN-starred moments that exalt the origin, simplicity, and authenticity of each ingredient. As the only MICHELIN-starred restaurant in the Douro Valley, this fine-dining project, unique to the region, is described by the head chef as a true ‘hymn to Portuguese gastronomy’.
